If you are under 18 or not the legal owner of the car is set, a camera in the car. Since you are more than 18 years and the owner of the car is not legal to do so. When the camera was a crime to be considered May as the police probable cause, and may be able to arrest the perpetrators. It is for the judge to decide whether it is legal or not. So anything illegal.

Probably couldnt prove in court that he was weeding. And even if you can not be loaded. If you are not yet in possession, so good. And the possession of any assets that you here and now. Not a video

But .............. Yes, you can use all the videos of you with a bag of grass as evidence by the police.
